Slow Cooker Chicken Tortilla Soup

Ingredients

  • 1 lb. chicken thighs
  • 15 oz. can diced tomatoes with green chilies
  • 10 oz. red, mild enchilada sauce
  • 2 cloves garlic, minced
  • 2 cups water
  • 14.5 oz. can chicken broth
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 bay leaf
  • 14 oz. can black beans
  • 1 cup frozen corn

How To

  1. Place everything in crock pot, cover and cook on low for 6-8 hours or on high for 3-4 hours.
